I don’t know about you, but I’m all about traditions, especially ones that revolve around holidays. But as much as I love tradition, I also know it can be fun to shake things up a bit and try something new every once in a while. If that’s you this holiday season and you are looking for stuffing recipe inspiration for Thanksgiving, then you have landed on just the right page in cyberspace.
Today I want to share a not-so-traditional recipe for a very traditional Thanksgiving side dish – stuffing. You have to serve stuffing as part of an American Thanksgiving. It’s a rule. But you don’t have to use your family’s 50-year old recipe if you’re ready for a change. Stuffing in July?
I first discovered this incredibly simple recipe for Sausage & Kale Stuffing many years ago in a grocery store magazine. I made it for dinner one night, and I thought it was delicious. My husband turned his nose up at it, and our son was just a young toddler at the time, so I don’t even remember if he ate any of it. Since I was the only one who liked it, I stashed away the recipe and forgot about it until several years later. I decided to make it again and see what kind of reaction I would get from my husband.
The second time around he absolutely loved it!! I was like, “Seriously?! I could have been making it all this time, but I thought you didn’t like it!” In fact, he liked it so much, he began to regularly ask me to make it. As a result, we started eating stuffing for dinner throughout the year instead of just November. It felt a little weird to eat stuffing in the middle of summer, but for as simple and delicious as this recipe is, I was able to get over that pretty fast. 😉
Why You Should Try This Recipe
I love this recipe because it is a truly simple recipe. It only has six ingredients, it’s super easy to make, it only takes about 15-20 minutes, and it tastes really good! Seriously, what more could you ask for?!
Admittedly, it may sound a little bit strange, but I promise you it’s worth trying at least once. My dad was watching me make this recipe a few Thanksgivings ago as we were chatting in the kitchen, and he told me (later on after eating it), that he did not think he was going to like it. He ended up liking it quite a bit and was pleasantly surprised.
So if you’re in charge of stuffing this year, I challenge you to try something new and give this simple recipe a shot!

- 1 package maple pork sausage
- 5 cups kale roughly chopped into 2-inch pieces
- 1 package cornbread stuffing (can substitute a different flavor of stuffing if needed)
- 1-1 1/2 cups raisins
- 3 cups chicken broth
- pecans for garnish
- salt & pepper to taste

- Heat your saucepan on medium heat for about two minutes. Add the maple pork sausage and brown for about 7 minutes until done.
- Add the chopped kale and cook for about 3 minutes. (The kale will shrink up quite a bit.)
- Add in the cornbread stuffing, raisins, and chicken broth. Make sure to stir thoroughly. Continue heating, and stir frequently until the stuffing is moist.
- Add salt and pepper to taste and garnish with pecans, if desired.
- If you can’t find maple sausage, you can use regular sausage, and then add about ¼ cup of maple syrup to the stuffing mixture after the stuffing has absorbed.
- I recommend buying the pre-washed and pre-cut kale that comes in a bag. It’s a little more expensive but worth every penny. I find washing and cutting kale to be very annoying, so I avoid it like the plague.
