At our house, when my son eats something green (can we say vegetable?), I usually feel as if I’ve just performed some slight of hand magic trick. So…when I can find a way to prepare a vegetable that even he will eat, I figure it’s worth sharing. I would be lying if I said this was a healthy recipe, but I can say that it’s simple to prepare, calls for just a few ingredients, and tastes great.
I make this recipe at least once a week as it is a family favorite around our house. My 16-month old daughter gobbles it right up, and even my finicky 5-year old eater will eat it too. If you have little mouths to feed, I wish you good luck, and for everyone else out there, enjoy!
