Spray the inside of your slow cooker with olive oil.
Place your chicken breasts in the bottom of your slow cooker. Optional: sprinkle some minced onion or onion powder over your chicken breasts.
In a separate bowl, mix the packet of Italian salad dressing & seasoning mix, the brown sugar, and the olive oil. This will form a very thick, sugary mixture.
Pour the mixture over the chicken, making sure to cover the chickens entirely. I use a spoon to spread it out, so that it’s evenly coated.
Allow to cook on low for 3-4 hours or high for 2-3 hours. (Adjust cooking time if you know your slow cooker tends to cook faster or slower. I have noticed that 2 hours on high is plenty of time for my slow cooker to cook three medium chicken breasts.
Shred your chicken, return to slow cooker, and allow to warm through. This shredded chicken tastes great in a sandwich or on its own. Enjoy!
